Time: 20-25 minutes
Ingredients:
- Potato(Cut it into 1 inch cubes) : 2 medium
- Baingan(Cut it into 1 inch cubes) : 4 small
- Oil : 2 tbsp
- Cumin Seeds : 1 tsp
- Green Chili Chopped : 1
- Onion Choppped : 2 medium
- Tomato(Cut it into 1 inch cubes) : 2 Medium
- Red Chili Powder : 1 tsp
- Turmeric Powder : 1/2 tsp
- Coriander Powder : 1 tsp
- Salt : to taste
- Coriander Leaves chopped : 1 tbsp
Method:
- Heat oil in a pan.Add Cumin Seeds after 5-6 secs add green chili.
- Saute it for half an minute add onions now and saute it for 15 minutes on low flame.
- Add tomato and saute it for 5-6 minutes on low flame.
- Add all the masalas. Stir it for 1 minute.
- Add aloo and baingan.
- Mix it properly, cover it and saute it for 10 minutes on low flame.
- Check with potato if its done.
- Garnish it with coriander leaves and serve it hot with chapati or parantha.
Note: Always cut the baingan and potato and deep them in water otherwise they will become black.
If you want to make it semi liquid,You can add a little bit of water too after step 5.
