Aloo Baingan Chatpata

Time: 20-25 minutes

Ingredients:

  1. Potato(Cut it into 1 inch cubes) : 2 medium
  2. Baingan(Cut it into 1 inch cubes) : 4 small
  3. Oil : 2 tbsp
  4. Cumin Seeds : 1 tsp
  5. Green Chili Chopped : 1
  6. Onion Choppped : 2 medium
  7. Tomato(Cut it into 1 inch cubes) : 2 Medium
  8. Red Chili Powder : 1 tsp
  9. Turmeric Powder : 1/2 tsp
  10. Coriander Powder : 1 tsp
  11. Salt : to taste
  12. Coriander Leaves chopped : 1 tbsp

Method:

  1. Heat oil in a pan.Add Cumin Seeds after 5-6 secs add green chili.
  2. Saute it for half an minute add onions now and saute it for 15 minutes on low flame.
  3. Add tomato and saute it for 5-6 minutes on low flame.
  4. Add all the masalas. Stir it for 1 minute.
  5. Add aloo and baingan.
  6. Mix it properly, cover it and saute it for 10 minutes on low flame.
  7. Check with potato if its done.
  8. Garnish it with coriander leaves and serve it hot with chapati or parantha.

Note: Always cut the baingan and potato and deep them in water otherwise they will become black.

If you want to make it semi liquid,You can add a little bit of water too after step 5.
