Ingredients
For Kofta
- Grated Bottle guard 2 medium Bowl
- Gram Flour 4 tbsp
- Salt to taste
- Red Chili Powder 1 tsp
For Gravy
- Onion Chopped 1 Large
- Tomatoes Pureed 2 Medium
- Green Chili 3-4
- Ginger 1 inch
- Garlic 7-8 cloves
- Turmeric Powder ½ tsp
- Coriander Powder 1 tsp
- Cumin Powder 1 tsp
- Salt to taste
- Red Chili Powder 1 tsp
- Chopped Coriander Leaves 1 tbsp
Method
For Kofta
- Take grated bottle guard and squeeze it to remove excess water.
- Add all the ingredients and mix it to make dough (a little thicker then pakodi, and thinner then roties).
- Heat oil in a kadai and deep-fry the prepared koftas until golden brown in color and crisp from the outside.
- Drain and remove onto an absorbent paper (it can be set of tissue papers).
For Gravy
- Make puree of ginger, garlic and green chili.
- Heat oil in a pan, add chopped onions and sauté until light golden brown.
- Add ginger, garlic and green chili paste, stir-fry briefly.
- Add turmeric powder, coriander powder, cumin powder , red chili powder and salt. Continue to cook on medium heat for one minute, stirring continuously.
- Add tomato puree and cook on high heat, stirring continuously till oil begins to separate.
- Add 1 cup of water and bring it to a boil.
- Gently add the fried koftas and simmer for another three to four minutes.
- Garnished with chopped fresh coriander leaves.
- Serve with roti/parantha.
Note:
- If you want to use Garam Masala:Take 1 tsp of garam masala.Add ½ tsp of garama masala while adding the red chili powder in gravy and rest of the garam masala,use it in garnishing.
- Milk/Cream: To make rich gravy, Instead of adding the 1 cup of water,can use 1 cup milk/1/2 cup cream. If you are using milk/cream,increase the quantity of all the masalas by 1/4th (like instead of using 1 tsp red chili powder use 1 ¼ tsp red chili powder).
- Instead of making the koftas like pakodies ,can make the koftas as balls with the wet palm.In that case the dough should be thicker then which we used here.
