Gajar Ka Halwa

Ingredients:

  1. Carrot shredded            2 big bowls
  2. Milk                                 1 1/2 kg
  3. Sugar                               3 1/2 tbsp
  4. Ghee                                3 tbsp
  5. Almond                            8-10
  6. Raisins                             15
  7. Cashew-nuts                    10
  8. Saffron                             5
  9. Cardamom powder        1/2 ts
  10. Silver varak                    1 paper

Method:

  1. For garnishing,Soak almond and raisins in hot water separately.Soak saffron in 2 tea spoon hot milk.
  2. Take out skin of almond and shread it.Cut Cashew-nuts in small small pieces.
  3. Boil milk in a pan.When it started boiling add grated carrot.Stir it continuously.
  4. Stir it continuously until the whole milk evaporates.
  5. Add ghee and continue stirring.
  6. When ghee starts separating from carrot add sugar and saffron.Stir it continuously until it get thick.
  7. Add almond, cashew-nuts and raisins.Apply silver varak on halwa.Serve it hot.
