Papdi Chat

Ingredients:

For Papdi

  1. Maida: 1 Kg
  2. Salt: to taste
  3. Oil: 8 tbsp
  4. Oil: 1/2 ltr for frying

Dhania Chutny

  1. Coriander Leaves chopped: 1 bowl
  2. Roasted Jeera Powder: 1/4 tsp
  3. Green Chili: 1 medium
  4. Lemon: 1/2
  5. Salt:to taste

Tamrind Chutny

  1. Tamrind:
  2. Jaggery:
  3. Garam Masala
  4. Roasted Jeera Powder:
  5. Kala Namak:
  6. Salt:

Boiled Potato

  1. Boiled Potato:
  2. Salt
  3. Coriander Leaves Chopped
  4. Chat Masala

Month

  1. Half Boiled Month:
  2. Salt
  3. Corinader Leaves Chopped:
  4. Chat Masala:

Method:

Papdi:

  1. Mix Maida,Salt and Oil and make a dough of it with the help of warm water.
  2. Make small small papdies.Use fork to make small holes in the papdies.
  3. Fry the papdies after an hour.

Dhania Chutny:

  1. Mix all the ingredients and make a paste of it.

Tamrind Chutny:

  1. Grate jaggery.
  2. Mix all the ingredients and make a thick paste of it.
  3. Boil it for 5-1o minutes.

Bolied Potato:

  1. Cut the potato in small pieces.
  2. Add corinader leaves,Salt and chat masala into that.
  3. Mix it well.

Month:

  1. Soak the month into water for 10-12 hrs or 1 night before.
  2. Wash the month and half cooked them in cooker.
  3. Add corinader leaves,Salt and chat masala into that.
  4. Mix it well.

Garnishing

Ingredients:

  1. Chopped Onions:
  2. Curd:
  3. Chopped Corinader Leaves
  4. Chat Masala
  5. Red Chili Powder
  6. Salt
  7. Pomgranate
  8. Barik Sev

Method:

  1. Arrange the papdies in form of circle.
  2. We can mesh 2 or 3 papdies into that.
  3. Make a layer of aloo then month on it.
  4. Spred dahi,dhania chutny and Tamrind chutny on it.
  5. Garnish it with chopped onions,corinader leaves and bhel sev.
  6. Sprinkle all the masalas,red chili and salt on it.
  7. At last spread Pomgrenate on it.

Serve it.

No need to add anything in curd.Keep it plain only.

Note:

  1. Always make papdi one day before.
  2. Use fresh chutnys always.
  3. For Tamrind Chutny: Soak jaggery in water to make better paste.
