Tiramisu

Serves : 8

Time : 20 minutes + chiling

Ingredients:

  1. mascarpone cheese : 500gm
  2. eggs 4,separated
  3. sugar : 90 gm
  4. savoiardi biscuits
  5. strongly brewed coffee : 2 cups
  6. Kahlua 2 tbsp(optional)
Method:
  1. Beat 45gm sugar with the eggy yolks until thick and creamy.Set aside.Whip the mascarpone cheese.To it,add the beaten egg yolks and mix until fully incorporated.
  2. In another Bowl,beat the egg whites.Whip them until soft peaks form.Brgin adding the remaining 45gm of sugar slowly until the egg whites are stiff and shiny.
  3. Gently fold the egg whites into the mascarpone and egg mixture.Refrigerate for 15-20 minutes.Mix together 2 cups of strongly brewed coffee and kahlua (if using) to use as the soaking syrup for the sponge fingers.Fill a shallow dish or baking pan with the coffee solution.Dip the lady fingers or savoiardi biscuits for a few seconds on each side until soft and then dust them with cocoa powder.
  4. To assemble the tiramisu,place the soaked biscuits on the bottom of a serving glass,followed by a layer of the chilled mascarpone cream.Flatten as you go.Continue in the same fashion until you have filled up your glass.Finally,sprinkle the tiramisu with cocoa powder and grated chocolate.Let this set in the refrigerator for at least 2 hours.
